The Mexican gastronomy is known in the whole world for its variety. The influences of the Mayan culture blend perfectly with the flavors that were introduced by the Spanish conquerors in the colonial time and the colors and spices of the Middle East.

The Recado is one of the most typical spices of the local cuisine. It is used in all different kind of dishes.
The Black Recado is a mixture of cloves, black pepper, oregano, cumin, garlic, coriander, seeds and vinegar.
The Red Recado is mixed with Achiote, which creates the red color that characterizes it. The Red Recado is used for all kinds of pibil dishes, like chicken or pork. It is also used for delicious seafood Tikin xic.
The Black Shrimp is a simple dish. All you have to do is to clean and chop the shrimp and mix them with the Recado (black paste), Salt, Garlic, Onion and tomatoes. Now you fry it well and give it over some fresh corn or flour tortillas.
